Pickled Unripe Blackberries


Sour and fruity unripe blackberries are pickled in a sweetened cider vinegar flavoured with foraged pine needles, and cinnamon, fennel & coriander seed.

lovely with cheeses, hams, on salads and game meat - the vinegar is sensational on ice cream, in cocktails and even supped from a spoon. 

(Gathering the red blackberries for this pickle causes lots of prickles, but fortunately it’s delicious enough to be worth the many ouches...)
