Last year our foraging friend Mark Williams from Galloway Wild Food came & co-hosted a course with us. Half way up a hill he slipped out a bottle of sweet elderberry vinegar & 25 people swooned as they sipped the inky vinegar from their spoons.
It seemed wrong not to let you all have a nip of this magic; and it really is completely magic. It's stunning sweet in cocktails, in hot water as a winter warmer, off a spoon to fend off colds, in salads, on roasted veg and in gravies - it's even rather special on a pork pie.
